The Flour Mill Owner of Shijiazhuang
(Beneath Taihang Mountains)
In a small village outside Shijiazhuang, there stood a century-old stone flour mill.
The mill's owner was named Zhao Maixiang, forty-nine, with a full and sturdy figure, hands strong enough to push a stone mill weighing hundreds of pounds.
"Machine-ground flour has no soul," she often said. "Only stone-milled flour has the true wheat fragrance."
(The Flavor Seeker)
After that autumn harvest, a baker from Beijing came seeking the best flour.
"Sister Zhao," he watched her pushing the mill, "you're so strong."
Maixiang stopped and wiped her sweat, her full figure dusted white with flour: "In the countryside, women must be able to work too."
She handed him a handful of freshly ground flour: "Taste it?"
He put it in his mouth, his eyes lighting up: "This is the flavor I've been looking for!"
(The Way of Kneading Dough)
"Want to learn how to use stone-milled flour?" That night, she invited him to stay.
She sprinkled flour on the board and began kneading: "Kneading dough requires strength, but also gentleness."
She pressed his hands onto the dough, then guided him to knead.
"Like this," she pressed against him from behind, her full figure warm and soft. "Use your body's weight."
Amid the flying flour, their bodies also intertwined.
(Steamed Buns in Morning Light)
In the morning, she steamed a pot of steamed buns for him.
"These are made with the dough we kneaded last night," she said, her full face flushed.
He took a bite, his mouth full of wheat fragrance: "These are the best steamed buns I've ever had."
"Because they were made with heart." She smiled. "I can send you flour regularly."
"Then I'll come personally to pick it up each time." He held her hand. "And learn kneading along the way."
In the flour mill beneath Taihang Mountains, some fragrances last longer than wheat...
