第一章 | Chapter One: 酱香天下 (Sauce-Fragrance World)
贵州遵义的赤水河畔,是中国酱香型白酒的发源地。
By the Chishui River in Zunyi, Guizhou, is the birthplace of Chinese sauce-fragrant baijiu.
一家百年酒坊的首席酿酒师叫黄金凤,四十八岁,身材丰满,是为数不多的女性酱香酒大师。
The chief distiller of a century-old distillery was named Huang Jinfeng, forty-eight, with a full figure, one of the few female sauce-fragrant baijiu masters.
"好酒要经过九次蒸煮,八次发酵,七次取酒," 她常说,"急不得。"
"Good baijiu requires nine steaming sessions, eight fermentations, seven extractions," she often said. "It cannot be rushed."
第二章 | Chapter Two: 品酒师 (The Taster)
那年冬天,一位日本清酒酿造师来交流学习。
That winter, a Japanese sake brewer came for exchange and study.
"黄老师," 他品了一口陈年酱酒,"这酒香... 太复杂了。"
"Teacher Huang," he tasted aged sauce-fragrant baijiu, "this aroma... is so complex."
金凤微笑着又倒了一杯,丰满的手腕稳健而优雅。
Jinfeng smiled and poured another cup, her full wrist steady and graceful.
"酱香酒有一千多种香味成分," 她说,"比任何酒都复杂。想知道为什么吗?"
"Sauce-fragrant baijiu has over a thousand aroma components," she said. "More complex than any other spirit. Want to know why?"
第三章 | Chapter Three: 酒窖深处 (Deep in the Cellar)
"真正的秘密在酒窖里。" 那晚,她带他去看百年老窖池。
"The real secret is in the cellar." That night, she took him to see the century-old fermentation pits.
窖池中,酒糟散发着醉人的香气。
In the pits, the fermented grains emanated an intoxicating aroma.
"这窖泥已经用了一百年," 她说,丰腴的身影在昏暗中如同一坛老酒,"里面有无数微生物,是活的。"
"This pit mud has been used for a hundred years," she said, her full figure in the dimness like a jar of aged wine. "Countless microorganisms inside, all alive."
"就像你?" 他问。
"Like you?" he asked.
她笑了,解开工作服:"来,让我展示更多'活'的东西。"
