The Noodle Master of Lanzhou

(By the Yellow River)

Lanzhou is the only provincial capital where the Yellow River flows through the city, and the hometown of beef noodles.

The oldest noodle shop by the river was run by Ma Xiufang, forty-seven, Hui ethnicity, with a full figure, a rare female noodle master.

"Authentic noodles require five colors: clear soup, white radish, red chili, green cilantro, yellow noodles," she often said. "Missing one isn't authentic."

(Silk Road Traveler)

That summer, a German traveler cycling the Silk Road came to her noodle shop.

"Boss Ma," he finished one bowl and ordered another, "these are the best noodles I've ever had."

Xiufang was pulling noodles, her full arms powerfully shaking the dough, noodles dancing like silk.

"Because they're made with heart," she raised her head, pride in her eyes, "just like your journey."

(Yellow River Night Talk)

"Want to know the secret of noodle pulling?" That night after work, she invited him for a walk by the Yellow River.

The river surged, night breezes blew.

"The secret of noodle pulling is in kneading the dough," she said. "It must be elastic, like life."

She turned, her full figure especially moving in the moonlight: "Want to learn?"

He nodded, and she took his hand. That night, amid the Yellow River's roar, they learned each other's rhythm.

(The Distance of One Bowl)

"Will you continue cycling?" she asked the day he departed.

He looked toward the Yellow River: "I'll ride to the end, then ride back."

"Why?"

"Because you're at the finish line." He took the bag of provisions she handed him—all flatbreads she made by hand. "For the distance of one bowl of noodles, I'm willing to walk a lifetime."
