In the old teahouse of Guangzhou's Liwan District, the bustle began at five in the morning.
林巧云,四十七岁,是这家茶楼的首席点心师。她身材丰满圆润,一双手却能做出最精致的虾饺和流沙包。
Lin Qiaoyun, forty-seven, was the head dim sum chef of this teahouse. Her figure was full and round, yet her hands could create the most delicate shrimp dumplings and custard buns.

"Making dim sum is like being a person," she often said. "You must use your heart."
